What Food Hygiene covers
Hygiene rating
The headline FSA rating, with the scheme type and key it was awarded under, FHRS in England, Wales and Northern Ireland, FHIS in Scotland.
Sub-scores
The separate hygiene, structural compliance and confidence-in-management scores that make up the rating.
Establishment type
The FSA business type, restaurant, retailer, caterer and the rest, which is how a food audience is narrowed.
Rating date and status
When the current rating was awarded, the local authority responsible, and whether a new rating is pending.

Checks
Rated establishments are matched to the business record by name and address, and the scheme behind each rating is carried with it.
Maintenance
New and revised ratings are picked up as FSA data is processed, with the rating date and any pending rating shown alongside.
